Monastery Cellars focuses on small lot vintages of premium VQA wines with the first vintage of wines from the on-site vineyard planted in 2012. Planting predominantly includes Vidal grapes, perfectly suited for the production of world renowned Icewines. The first recorded Icewine harvest dates back to 1794 in Franconia, Germany, when local monks were faced with winter much earlier than expected. The monks, facing the adversity of mother nature, are credited as being the inventors of Icewine by pressing juice from the frozen grapes. At the time, these new wines were touted to be nothing short of “nectar from the gods,” or so the legend goes.
2017 Prior's Cask Vidal
Vidal makes for an exceptional table wine specially selected by the Priors. Light fresh and fruity, this wine brings forward a bright spirit on the nose and palate.
2017 Prior's Cask Merlot Cabernet
Merlot Cabernet is a classic blend for red wine and makes for an exceptional table wine specially selected by the Priors. Soft velvety tannins are complemented by rich flavours of blackcurrant and black cherry on the palate.
2017 Vidal Icewine
Invented by German Monks in 1794, Icewine has now been perfected by Canadian winemakers. An intense and luxurious sweet wine with rich flavours of tropical fruit and honey.
2021 Chardonnay Pinot Grigio
A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully. Ripe, clean fruit was crushed, pressed and fermented for 10 days. The final cuvée consisted of 80% Chardonnay and 20% Pinot Grigio.
Fruit flavours of pear and apple with hints of lemon and minerals. The wine is light bodied with a soft palate and long finish. Ideal for light appetizers and fish.

This medium-bodied red wine is produced from the Syrah grape which is known for aromatic notes of black fruit and pepper spice. Pair with pork, lamb, beef, and red sauce pastas.
